How Many Different Ways Can You Prepare Grouper?

We took this question to Clearwater Beach area restaurants and this is what we discovered. Many of them offer a blackened grouper option. Each has their own secret herbs and spices that none seemed ready to reveal.  Many also offer a jerk version that has nothing to do with repetitive motion or a relative no one is fond of. Jerk is a Jamaican style of cooking that is a hot spice mixture that can include peppers, cinnamon, garlic, nutmeg, allspice, onion, salt and pepper.

The classic grouper grilled and then served with lettuce, tomato and house-made tartar sauce on a toasted bun. Notching it up a bit, some restaurants serve the classic with guacamole, sprouts and Sriracha mayonnaise. Others lightly bread their grouper and then fry it.
